Soy sauce koji (醤油麹)

I was surprised that I put on weight.
These days my son eats snacks and sweets a lot, so I eat them, too. I have to go on a diet.

There was some rice malt (koji) left when I made pickled herring (Nishin-zuke) last fall, so I made Soy sauce koji this morning. It's a piece of cake. Just mix some soy sauce and the same amount of rice malt. One cook said that you should stir once a day, the other cook said you don't have to anything for about two months. I don't know which is better, so I will stir it when I want.
It's interesting to see changing little by little.

What do you use soy sauce koji for?

Thank you very much always.
I will use it for fried meat, fried rice, Gyoza and so on. I think I can use it instead of normal soy sauce.
